Kodiak Cakes: If I Was On A Deserted Island, I Might Take These Pancakes With Me (Want to Try?)

kodiakWhile I can wake up, grab a cup of coffee and be fine for an hour or so without breakfast, my kiddos want breakfast as soon as their eyes pop open. Unfortunately, most items that are available in a hurry aren’t the healthiest, stick-to-your-ribs foods. So what to give the kids that is healthier, tasty, yet filling and more satisfying than, say, a toaster waffle? Enter Kodiak Cakes.

Kodiak Cakes sent us their pancake mix to try in two varieties: the original Whole Wheat Oat and Honey, and its newest addition, Buttermilk and Honey. Both varieties are made with 100 percent whole-grain wheat flour and 100 percent whole-grain oat flour. Neither mix has any preservatives, added fat, sugar or cholesterol. The nutritionals and ingredients on these bad boys are pretty flap-jacking fantastic.

Two 4-inch pancakes come with 7 grams of protein, 4 grams of fiber and only 2 grams of sugar, all at 130 calories. All of that is awesome, of course, because it’s great to make your pancakes as healthy as possible, right? But they really had me at “They are also incredibly easy to make, you just need to add water.” I was in.

Luckily, these flapjacks aren’t just convenient, easy and more nutritious than your standard pancake. They are delicious. I mean DELICIOUS. All caps. My kids loved their mini pancakes so much that I couldn’t keep up with their demand. As soon as I’d get more thrown on the griddle they’d be hollering “More!” and “Mo!” respectively.

They’re all at once golden, light and fluffy, hearty and filling, with enough of a bite yet somehow melt in your mouth. Add a few chocolate chips as a special treat and regret it because that will be all you want to eat for breakfast forevermore. Luckily for me, Kodiak Cakes are sold in Target stores, so I’ll be able to buy them every time I’m there … I mean, sometimes.

    These are definitely going on my shopping list next time I’m at Target. I’ve read how you can make and freeze pancakes for a quick portable snack. This is the year of making workouts fun and enjoyable!

    Low fat and low sugar, with plenty of fiber and protein. What’s not to love? I would most definitely try them. I like the blueberry addition too.

    I love pancakes but don’t like to eat them too often because I haven’t found a healthy easy to make box one that actually tastes delicious these sound like ones I’d try with some bananas in them :-)
